About Gamba

Back in 1998 Derek Marshall had a concept for a restaurant that would let produce speak for itself. Gamba was to become about the simple cooking of fantastic produce and over a decade on, the ethos is still the same. A modern new elegantly styled restaurant complements Derek’s elegant, classic but modern style of cooking.

Gamba’s cookbook echoes Derek’s concept for the restaurant, ‘Simple Cooking’ where the secret of the famous Gamba’s fish soup is untold.

It all started for Derek back at the Fountain restaurant where he realised his passion and aptitude for cooking. Derek spent time in the Channel Islands and French Alps learning his trade. On return to his home town he was appointed the head chefs position at one of Glasgow most prestigious restaurants, Rogano.  A brief sabbatical to Spain gave Derek the opportunity to hone the art of cooking fish. On return again to Glasgow Derek was appointed head chef of Papingo, another classic restaurant in Glasgow dining history.

In 1998 Derek was head chef and co-owner of Gamba, which would turn out to be one of Glasgow’s finest restaurants. Derek is now sole owner of Gamba and looks forward to a prosperous future.

We’re passionate about sourcing and delivering the best produce with our fish direct from sustainable stocks. It’s then cooked with respect using fresh seasonal ingredients to offer an extraordinary dining experience. Expect to find some of Scotland’s best seafood on our menu – which is updated every six weeks – including locally sourced Isle of Gigha halibut, Scottish lobster and Scottish smoked salmon from Marrbury.

At Gamba we care about what we put on a plate. Our executive chef and owner – Derek Marshall is committed to reducing his carbon footprint and this dedication has resulted in Gamba being the first Glasgow member of the Sustainable Restaurant Association (SRA). Derek also lends his support to many charities including The Fishermen’s Mission, STV Appeal, Cancer Support Scotland and the Marine Conservation Society.

"Gamba seafood restaurant has been acknowledge for the last 17 years and this year retains its two AA rosettes award by the British Automobile Association (AA). Our rosettes are awarded for the innovation, greater technical skill and skillset of the dishes cooked at Gamba by chef patron, Derek Marshall."
Two AA rosette restaurant
"For a fish-fix in Glasgow’s theatre district, seek out this beautifully lit basement restaurant. Now in its 16th year, it serves exquisite seafood, often with an Asian twist – try scallops and monkfish steamed en papillote with ginger and spring onions"
"We have once received the Trip Advisor Certificate of Excellence for the last five years. Thanks to all of our staff and the continued support from our guests. The Certificate of Excellence award celebrates excellence in hospitality and is given only to establishments that consistently achieve great traveller reviews on TripAdvisor. The ‘Hall of Fame’ was created to honour those businesses that have earned a Certificate of Excellence for five consecutive years"
Trip Advisor Certificate of Excellence 2015 and Hall Of Fame Winner
"5 Star Rating from Time Out Glasgow - Gamba is an accomplished seafood restaurant that offers good ingredients given an international spin in the kitchen. Since its launch in 1998 Gamba has been among a select list of Glasgow eateries that are both eminent and much loved which is testament to chef-proprietor Derek Marshall's judgement and expertise."
Time Out Glasgow
"Fish fans, as you would expect, are spoiled for choice and while I almost ordered the Isle of Gigha Halibut for my main, I opted for roast Shetland cod with citrus gravy, broad beans, asparagus and prawns - beautifully cooked and working well with the other flavours. King scallops and monkfish with ginger and spring onion steamed in paper was another amazing fusion of flavours."
Karen Peattie for High Flyer
"“The best fish soup in town” and “superbly prepared seafood” help evidence the “very serious cooking” at Derek Marshall’s city-centre basement – a “cosy” destination, that has long been one of the Glasgow’s culinary standard bearers."
Hardens UK’s Restaurant Review
"Supporting the local business community, Gamba is a proud member of the Glasgow Restaurateurs Association "
Glasgow Restaurateurs Association Member
"We were recognised for our efforts in offering and delivering a very high standard of customer service, food and experience at Gamba"
BII Scotland DRAM Customer Service Award 2013
"As always, Gamba is a civilised, intimate place to eat with good service. It’s peaceful enough to converse easily, but with enough life to leave you feeling that it’s burning on all cylinders."
Joanna Blythman - Reviews Gamba
"For many, Gamba is Glasgow’s best on the strength of its fresh fish and seafood dishes prepared by chef and co-owner Derek Marshall — complemented by the professional and cordial staff. The basement venture is modern and stylish without feeling excessively fancy. Starters include Marshall’s signature fish soup or sashimi, with succulent slices of salmon and scallops"
Frommer’s Travel Guides
"Marshall’s take on fish soup is a legendary broth loaded with crabmeat, ginger and prawn dumplings (naturally), but his kitchen also shows his class with Loch Duart salmon tartare, sea bass Caesar salad or red mullet with honey mustard sauce and chanterelles. "
The Waitrose Good Food Guide
"We were awarded the highest accolade from the Sustainable Restaurant Association with their three star sustainability rating in 2015 - 2016. "
